I have been having these fluffy Gluten-Free, Sugar-Free & Vegan Pancakes every day for breakfast for the last 30 days! Not only because I wanted to ensure I have the best recipe for you, but let me be honest with you they are just too good not to have them every single day! Light and fluffy like any good pancake should be.
Delicious and nutritious breakfast
Whether it’s a warm croissant, a toast with marmalade or a big bowl of porridge with tons of nut butter on top, we all have those comfort breakfasts that make long winter days a little warmer. Mine has a round shape and feels so fluffy I would take it back to bed with me 😊. Some delicious and nutritious Gluten-Free, Sugar-Free & Vegan Pancakes!
I love adding syrup and/or chocolate to my pancakes so there is no point in adding more sweetener in the batter! This way everyone can add sugar according to their personal taste.
The Secret to fluffy Gluten-Free, Sugar-Free & Vegan Pancakes lies in the flour you use – for light and fluffy gluten-free bakes you need a combination of different flours, such as rice and cornflour for example.
My favourite is the one from Doves farms gluten-free range – click here to find it. This self-raising flour means you don’t need to worry about the quantity of baking powder or which flours to use, their mix makes the best pancakes!
Play with different gluten-free flours until you find the one that fits you 😉.
I like to have my pancakes with a dollop of coconut yoghurt and some berries or homemade apple compote which brings some natural sweetness.

The secret fo light and fluffy gluten-free pancakes lies in this recipe! Added bonus they are also vegan and sugar-free.
- 250 gr gluten-free flour self-raising (if not add 1 tsp. baking powder)
- 2 tbsp. chia seeds (ground)
- 1 tsp. cinnamon powder (optional)
- 300 gr dairy-free milk
- 30 gr melted rapeseed oil (or coconut oil)
Preheat and lightly grease a frying pan.
In a large bowl mix together all dry ingredients.
Add the milk and oil and mix until you get a thick and smooth batter.
Take a ladle half full of batter and pour it in the middle of the pan, spreading very lightly.
Cook for 1 minute then add on a lid ( this will your pancakes extra fluffy )
Cook for a further minute then flip the pancake onto the other side for 30 secondes.
Repeat … and Enjoy!
