Today for tea time I have made some delicious Nutella Mignardises or more commonly called NOTella Mignardises! Mignardise is a French word which means little sweet that you typically have after a heavy dinner! This recipe does not contain any sugar, fat or dairy, which makes it perfect anytime of the day!

The small joys of live are often the simplest, such as reading a good book curled up in the sofa with a cup of tea and a little something sweet by your side. Those little sweets are just perfect because even though they are full of delicious chocolate, there is no risk of them melting in your hand while you keep uncovering the mysteries of your favourite book 😊
They won’t melt because they do not contain any fat and to make it even better there is no sugar added! The natural sugar from the apricots give a subtle fruity taste which goes really well with the chocolate. Made of just 5 simple ingredients my Mignardises will only need a few minutes of your attention! Just enough for you to get back into tour story and let your mind wander again.
For an even more chocolatey experience I have added some chocolate extract that you can find on the LittlePod website or on amazon. I love this brand as their products are suitable for vegans, they have no sugar added and are responsibly sourced, that’s a yes! It is absolutely okay though not to put any in your recipe, it will remain as delicious 😊

This recipe does not contain any sugar, fat or dairy, which makes it perfect anytime of the day!
- 150 gr toasted hazelnuts
- 100 gr dried apricots
- 1 + 1/2 tbsp. cocoa powder
- 1 pinch of salt
- 1 tsp. vanilla extract
- 1 tsp. chocolate extract (optional)

On a baking tray, spread out the hazelnuts and bake at 180°C for 10 to 12 minutes.
(Omit this 1st step if your hazelnuts have already been toasted.)
Take the hazelnuts out of the oven and wait until they have chilled to remove the very thin and brown layer on top of each ones.

Place the hazelnuts in your food processor and blend until the nuts are finely ground.
Transfer into a bowl.

Sliced the apricots into small chunks (if too dry leave them in a bowl of hot water for 15 minutes) and blend until it becomes a paste.

Add the ground hazelnuts into the blender with the cacao powder, salt, vanilla extract and chocolate extract (optional) and mix until it becomes sticky.

Roll the mixture into small balls, you can hide a little hazelnut in the centre of each one if desired.

Place the Mignardises into the freezer for 1 hour to set.
Store in an airtight container in your fridge! Et voila! 😉
