In less than 10 minutes you will end up with a cookie that is super gooey on the inside, and the great thing is that you don’t need to wait for the cookies to cool down, they can be eaten straight out of the oven! Maybe wait 5 minutes so that you don’t burn your tongue and enjoy a delicious and gooey chocolate cookie while still warm.
These Easy Vegan & Gluten-Free Chocolate Cookies are crunchy on the outside and soft on the inside, making them the perfect afternoon treat.
I have already mentioned this in a previous post but let me say it again: CACAO is a great source of antioxidants which your body needs to combat free radicals. Try and consume a good quality cacao powder or chocolate square if you like this as a treat. The higher the amount of cacao the more you can benefit from its antioxidant’s properties.

I have chosen to make this recipe a gluten-free one! I have used rice flour which is extremely versatile and easy to bake with. You can use any flour you like; spelt flour works great too.
Almond powder is an ingredient that I love using in cookies, it gives them such a great texture and as result it is best you do not substitute it for another flour. Almond flour will your cookie a kind of “sandy” texture if you know what I mean! Perfectly crumbling in your mouth with a very buttery taste.
Dairy-free milk – choose the one you like; in this recipe I have used unsweetened oat milk.
Coconut oil – this is my favourite oil to bake cookies with, it brings so much sweetness and a wonderful taste which grows stronger day after day.
Unrefined Cane Sugar – try to use the unrefined one and if you can, swap for coconut sugar which I find more flavourful (that may be because I am a huge fan of coconut) . I have opted for a cheaper option in this recipe and chose cane sugar.
- 120 gr rice flour
- 60 gr almond flour
- Pinch of salt
- 1 tbsp. cacao powder
- 100 gr unrefined cane sugar
- 1/2 tsp. baking powder
- 35 gr coconut oil
- 60 gr dairy-free milk
- 1 tbsp. almond flakes (optional)
- Preheat your oven to 180°.
- In a large bowl mix together
the rice flour, almond flour, salt, cacao powder, cane sugar and baking powder.
- Next, add the melted coconut oil and dairy-free milk, mix in with your fingers until the dough comes together.
- Scoop 2 tablespoon of the cookie dough onto the prepared baking tray and pat it slightly.
- Bake for 15 to20 minutes. Do not worry if your cookies come out of the oven soft, they will harden as they cool.
