This Vegan and Gluten-Free Waffle recipe has been my favourite recipe to make this month.
It also is the recipe I sell every Saturday at Soho Vegan Market in London. This is a dream come true for me, being in one of the best vegan markets in London around such a beautiful community of traders with delicious food that makes it almost impossible to choose what to have for lunch! But more importantly, I love talking to you and share with you what I enjoy doing the most: baking delicious & nutritious vegan treats.

Easy Recipe
I would be lying if I said that these Vegan and Gluten-Free Waffles were the result of a lot of trials and errors! In fact, I made this recipe just by looking at what was left in my cupboard and got lucky 😊. A bit of coconut flour, some rice flour, and an open can of coconut cream in the fridge, to which I added some cane sugar and coconut oil, et voila! Keeping it very simple!
I was delighted to end up with light, fluffy and coconutty waffles.
Gluten-Free Flour
I like baking with coconut flour as it adds some sweetness to the batter. I only use 50 gr in this recipe so a bag will allow you to make a lot of waffles 😊. Coconut flour can now be found in most supermarket or on Amazon.
I also use rice flour, the taste is very neutral and it works very well in cakes and other sweet recipes.
The Topping
On my waffles I love to spread some homemade vegan nOtella with a sprinkle of shredded coconut or some Biscoff spread with sesame seeds and sliced bananas.

These Vegan and Gluten-Free Waffles are best eaten after you have just made them. They are also perfect to freeze!

Vegan & Gluten- Free Waffles
For even more fun I love serving them into skewers with some pieces of fruits, you just need to make smaller waffles.
This recipe is certainly one of the easiest recipes on my blog if not the easiest Vegan and Gluten-Free Waffles ever 😉

- 200 gr rice flour
- 50 gr coconut flour
- 30 gr cane sugar
- 1 pinch of salt
- 400 gr coconut cream (1 full fat can)
- 50 gr coconut oil (melted)
- 100g gr water

Preheat your waffle maker.

In a large bowl, stir together the rice flour, coconut flour, cane sugar and salt.

Next add the coconut cream, coconut oil and water keep stirring until smooth. It should make a thick and smooth batter.

Spoon the batter into a ladle and pour onto your hot waffle maker, spreading it all over before closing it and letting cook for 3 to 4 minutes.
Repeat until there is no batter left.
Best enjoyed warm 😉
