Between a crêpe and a pancake
I can’t decide which I love most between crêpes and pancakes, one is light and delicate while the other one feels so sweet and fluffy. I thought I will try and have the best of both worlds 😊 A thick and large crêpe/pancake that is both light and fluffy.
How to make the best Vegan Banana Crêpes
This breakfast is a classic although this recipe is nothing like its original. While most recipes ask for a lot of sugar this one does not contain any! I have used bananas instead of sugar which works wonder not only for the caramelised taste they bring to the recipe but also for their great texture.
Bananas make the crêpes light, gooey and fluffy all at the same time.
Adding some sliced bananas into the batter once on the frying pan is the step that you won’t want to miss! They caramelised nicely which is the best thing ever!
Remember: you will need some very ripe bananas.

I also like to add some flaxseeds to the batter creating a jelly like texture, Flaxseeds are great and a must on a vegan diet, they are full of fibres and are high in omega 3.
TOPPINGS
I have melted some dairy-free dark chocolate and added some passion fruit! Passion fruit and chocolate are a match made in HEAVEN! And to finish it off, some coconut yoghurt from the Coconut Collaborative.

This easy Vegan Banana Crêpes recipe contains only the natural sweetness of the bananas, ready in less than 20 minutes for a delicious and feel good breakfast.
- 2 ripe bananas
- 250 gr dairy-free milk
- 1 tbsp coconut oil melted
- 1 tsp vanilla extract (optional)
- 1 tbsp flaxseeds
- 160 gr gluten-free flour
- ½ tsp cinnamon powder
- 1 tsp baking powder
- 1 pinch of salt
- 60 gr melted chocolate
- 2 passion fruits
- 4 tbsp coconut yoghurt
- 2 bananas (sliced)

In a bowl, mash 2 large bananas with a fork until it resembles a thick purée.

Stir in the dairy-free milk, coconut oil, vanilla and flaxseeds.

In a different bowl, mix together the flour, cinnamon, baking powder and salt.

Add the wet ingredients to the dry ingredients and mix until smooth.

Heat a large non-stick frying pan or pancake pan over a medium heat with ½ tsp of coconut oil.

Using a ladle, pour the batter in the frying pan, spreading it all over by moving the pan in circles. Pop some sliced bananas into the batter if desired (they will caramelised nicely)
Leave it for 2 minutes or so, covering the frying pan with a lid so that the steam cooks the top of your crêpe without having to flip it.

Repeat this last step until you have no batter left.

Add the melted chocolate and some sliced bananas.
Sprinkle some passion fruit and a tbsp of coconut yoghurt on top of each crêpe.
