I am finally able to say that have nailed the perfect Vegan Chocolate Chips Cookies! They are crunchy on the outside and soft on the inside, making the perfect afternoon treat.

Last Sunday afternoon – after one month in quarantine, while I would normally bake every 2 or 3 days, I felt quite low in energy and as a result had not baked for a week (apart from teaching my boyfriend how to make a banana bread, which he ended up doing better than I 😊). Both sitting in the sofa, watching Star Wars and wishing we had something sweet to enjoy it with I thought “ok let’s do some very quick cookies” and be back in the sofa in no more than 10 minutes! But because according to my boyfriend my best recipes happen when I don’t write them down, he decided to watch and take notes. And my favourite cookie was born!

Dairy-free chocolate
I always use one of my favourite vegan chocolate when making cookies: the chocolate bar Ombar. They have so many different flavours, my favourite is the 90% cacao followed by the Salt & Nibs bar because there is nothing better than salted chocolate.
Cacao is a great source of antioxidants your body needs to combat free radicals and so although chocolate bars won’t contain as much antioxidants as the cacao powder it is still a good source. Remember the higher cacao content the best so try and choose to eat chocolate with a cacao content above 70%.

Because of the shortage of flour, I haven’t been able to find any gluten-free flour so I am using a mix of spelt flour and almond powder in these Vegan Chocolate Chips Cookies. If you are gluten intolerant you can swap the spelt flour for a gluten-free one.
BONUS: I am using maple syrup meaning this recipe is refined sugar free.

Vegan Chocolate Chips Cookies

These Vegan Chocolate Chips Cookies are crunchy on the
outside and soft on the inside, making the perfect afternoon treat.
Ingredients
- 120 gr spelt flour
- 60 gr almond flour
- 30 gr chocolate chips
- 1/2 tsp. cinnamon
- 1 tsp. baking powder
- Pinch of salt
- 40 gr vegan butter
- 100 gr maple syrup
Instructions
- Preheat your oven to 180°C
- In a large bowl mix together the flour, almond flour, chocolate chips, cinnamon, baking powder and salt.
- Rub in the vegan butter, incorporate the butter with your fingers until you get a crumble like mixture.
- Next, add the maple syrup and form a dough.
- Scoop 2 tablespoon of the cookie dough onto the prepared baking tray and pat it slightly.
- Bake for 20 minutes, until they turn a lovely golden brown. Do not worry if your cookies come out of the oven soft, they will harden as they cool.
- Wait 5 minutes and place on a wire rack for 10 minutes.

They can be made with plain flour and kept in an airtight container for up to 4 days 🙂
